Slow-Cooker Chicken Cacciatore

Most families have busy schedules year-round, and easy-simple-crockpot-chicken-cacciatore-classico-tomatoesplanning family dinners is usually a chore.  One of the busiest times of the year in our house is just beginning with the season of spring sports.  Between three kids playing soccer, baseball, lacrosse, and tennis; everyone has somewhere to be each day of the week.  We try to keep dinners as easy and healthy as possible.  I wanted to share one of our favorites and hope it can make one of your evenings of feeding the family a little easier too.

Slow-Cooker Chicken Cacciatore

3-4 boneless chicken breasts (or thighs)
28 oz. can crushed tomatoes
½ red bell pepper, sliced into thin strips
½ green bell pepper, sliced into thin strips
½ large onion, sliced
1 tsp dried oregano
1 bay leaf
salt and pepper to taste

1.    Season chicken generously with salt and pepper and place in slow cooker
2.    Pour tomatoes over chicken and stir
3.    Set slow cooker low for 8 hours or high for 4 hours
4.    One hour before cooking is complete, add peppers and onions and stir
5.    Serve over your choice of pasta
6.    Top with grated parmesan cheese (our family likes to load it on)
